Freezer Friendly Friday: Scooter’s Spaghetti! Make 4 Freezer Meals For Only $17.52!!

I love cooking for my family, and I have found that freezing meals ahead of time has saved me time, energy and frustration. Laughing

So I have decided to start a new segment on Mamas Spot... Freezer Friendly Friday!

Every week I will be sharing with you a great (and frugal) meal that you can make and freeze that will help you out later on in the week!

Today I wanted to share with you Scooter’s Spaghetti. This is a fantastic dish!! My hubby gobbles this up in two seconds!

And the best part... it's super cheap and easy to make!!!

Here is what you will need: (you can make this smaller or bigger if needed)


:: 2 bags of uncooked spaghetti (I used linguine, my hubby doesn't like spaghetti)
:: 2 pounds ground beef
:: 2 eggs
:: 2 large can spaghetti sauce (26.5 ounces)
:: 1 tablespoon butter
:: 1 cup chopped red peppers
:: 2/3 cup chopped onions
:: 16 ounces cream cheese
:: 2 tablespoons milk
:: 2 bags of Parmesan cheese
:: French-fried onions

I have broken this down into how much this will cost as well! I do most of my shopping at Walmart and I price match anything that I can!

 

Instructions:

1. Cook spaghetti according to directions on the package. Cook to al dente, drain and set aside.

2. Brown ground beef. Drain excess grease. Add spaghetti sauce to skillet and heat.

3. Combine chopped onions, peppers and butter in small glass bowl. Cover and microwave 4 minutes on HIGH until soft.

4. Add cream cheese and milk to vegetables and stir well. (If cream cheese is not soft, nuke it for 20-30 seconds to make it easy to spread.)

5. Using a 12 x 8-inch baking dish (depending on how much you make), assemble in the following order: layer cooked spaghetti, cream cheese/vegetable mixture, spaghetti sauce and meat, parmesan cheese (amount subject to your own taste)

6. Bake at 350 degrees for 25 minutes. Top with french-fried onions and continue baking 5 more minutes. (This is the secret ingredient–don’t let them burn.)

Notes:

If you are making this ahead of time refrigerate or freeze without the French Fried onions.
Don’t forget to add them 5 minutes before casserole is finished cooking.
