Mamas Monday Meals: Crock Pot Honey Sesame Chicken! Yummy!

Here is the yummy dinner we will be having tonight!! I love using my Crock Pot on a hot summer day!

Any excuse to have dinner done without putting a ton of work into it and having to turn the oven on! Wink

I love sticking something in my crock pot in the morning and voilà! By the evening we have a delicious dinner!

INGREDIENTS:

6-8 boneless, skinless chicken thighs or 4 chicken breasts

Salt and pepper

1/2 cup diced onion

2 cloves garlic, minced

1/2 cup honey

1/4 cup ketchup

1/2 cup low-sodium soy sauce

2 tablespoons vegetable oil or olive oil

1/4 teaspoon red pepper flakes

4 teaspoons cornstarch

1/3 cup water

2 packets minute rice, optional

1/2 tablespoon (or more) sesame seeds

3 scallions, chopped

DIRECTIONS:

Place chicken in Crock Pot and lightly season both sides with salt and pepper.

In a medium bowl, combine onion, garlic, honey, ketchup, soy sauce, oil and red pepper flakes. Pour over chicken. Cook on low for 3-4 hours, or high for 2 hours.

Remove chicken to a cutting board, leaving sauce. Shred chicken into bite-sized pieces; set aside. Prepare rice according to package instructions.

In a small bowl, dissolve 4 teaspoons cornstarch in 1/3 cup water; add to crock pot. Stir to combine with sauce. Cover and cook sauce on high for ten more minutes, or until slightly thickened.

Add cooked rice to 4 plates, top with chicken and spoon sauce over top. Sprinkle evenly with sesame seeds and chopped scallions.

Serve and enjoy!

My Amazing Almost Zero Fat Birthday Cake!


Easy

So this year I decided to mix it up a little bit. I've had a chocolate cake for my birthday for the last 30 years, so this year I did something different!

And with how I ate while on vacation it's probably a good thing that I went this route. Laughing

Today I made myself a watermelon cake for my birthday!

And I can honestly say it was really satisfying and so refreshing! This would be an awesome cake to make on a hot summer day!

To make this super yummy and easy cake all you need is 1 seedless watermelon, (make sure it's seedless Smile)  whipped cream, and any other fruit you would like!

I made my own whipped cream by mixing 1qt. whipping cream and half a cup of powdered sugar.

So next time you are craving cake, reach for a watermelon instead! Smile

Mamas Monday Meals: Kettle Cooked Potato Chip Chicken & Southern Macaroni Salad!

I am so happy with what I made for dinner tonight!!! I decided to think outside the box a little bit on this one.

My hubby is a huge fan of Lay's Kettle Cooked chips so I decided to incorporate them into our dinner.

When I make breaded chicken I usually use panko crumbs as a coating, but I think we are now going to use Kettle Chips instead!

These are super easy to make too!

Ingredients:

:: Chicken

:: 1 bag of your favorite flavor kettle chips

:: 4 eggs

:: 1 cup flour 1 cup elbow macaroni

Cut your chicken into strips, coat with eggs, flour, eggs again and then your crushed chips.

Once your chicken is coated you can either bake it for 30 min or fry it.

Enjoy!

Southern Macaroni Salad

Ingredients:

:: 3/4 cup cheddar cheese cut into cubes

:: 1/2 cup celery chopped

:: 1/2 cup peas spring onions

:: 1/2 cup mayonnaise

:: 1/4 cup sweet pickle relish

:: 2 tbs milk

:: 1/2 tsp salt and Fresh cracked black pepper to taste

:: 2 hard boiled eggs coarsely chopped

Cook your pasta to be al dente (should have instructions on the package) 

Once cooked combine the rest of your ingredients and chill for 4 hours.

Super yummy!!

Mamas Monday Meals: Yummy Bacon & Egg Boats!

This is the yummy dinner we had tonight! This was my first time making this and they were soooo... good!

My husband thought they were like quiche in a bread bowl. He loved it so much he ate 2 of them!!

The great thing is that you can customize these with any ingredients you like!

We used turkey bacon that made them a little bit healthier.

Ingredients:

:: 1-2 packages of Pillsbury Simply Rustic French Bread. (you will get 2 boats for every package)
:: 3-6 large eggs (3 eggs for every 2 boats)
:: 2 Tbs. heavy cream
:: Bacon - I used 10 strips of turkey bacon
:: 1/2 cup shredded white cheddar cheese
:: Handful of Spinach
:: Salt and pepper for taste

Directions:

:: Preheat oven to 350 degrees

:: Slice your french bread in half to make 2 boats

:: Place the bread in the oven for 20 min or until really lightly browned

:: While the bread is cooking, prepare your bacon. We cook our turkey bacon in the microwave.

:: Remove bread from oven and cut a lengthwise slit down the middle - remove some of the extra bread in the middle

:: In a big bowl whisk together eggs, cheese, cream, cooked bacon, spinach and salt & pepper.

:: Pour your mixture into the boats until they are almost completely full - I used some of the cheese and bacon and sprinkled it on top.

:: Bake another 20-30 min. until you can see the egg has cooked all the way through.

My hubby thought they were really good dipped in a little ranch dressing.

Serve up and enjoy!
