
Fall is here, and with it cold windy days. Yesterday it was a particularly chilly afternoon so as I was thinking about what to make for dinner soup popped into my mind. I wanted something that was quick, easy, and savory which is why I chose easy potato soup.
p.s. I didn't have a whole onion so I used a couple stalks of green onion with what I had and it turned out great!
Ingredients:
4 - 5 medium potatoes, diced (I prefer Red potatoes)
1 onion, diced
1 stick butter
salt
pepper
milk
Directions:
Cover potatoes with water and bring to a boil, lower heat and simmer until tender. Saute onion in butter, until translucent. Combine onions and potatoes. Add milk to desired consistency. Salt and pepper to taste.
