
To be completely honest when I first heard of Quinoa pancakes I was a little skeptical. I am a big fan of the standard American fluffy pancake and I didn’t like the idea of messing with my recipe that I have been using for years. When it comes to food I always pride myself on being game with anything and trying it all even if only just once.

So I decided to give it a shot and my pancakes have never been the same since! I now use quinoa for my pancakes and even in a lot of my other baked goods and they are Sooo good!
Come Sunday morning these babies are my family’s favorite treat. I hope these amazing pancakes will be welcomed in your home too!
Ingredients:
• 2 eggs
• 1 cup milk
• 3 Tablespoons butter melted – 1 tbsp. for the frying pan
• 4 tsp. Maple Syrup
• 1 Tablespoon baking powder
• 1/4 teaspoon salt
• 1 1/2 cups flour
• 1 cup cooked/room temp. quinoa

How to prepare:
1. In a mixing bowl combine and whisk together eggs, butter, syrup and milk.
2. Add in baking powder, flour and salt
3. Gently mix in your quinoa
4. Heat up a medium non-stick frying pan and add a tsp. of butter into the pan
5. Add 2 heaping tbsp. of the batter to your pan.
6. Cook for 2 minutes per side or until slightly brown.

Once finished, serve with a topping of your choice. My favorite is always a classic of syrup. If you love quinoa or are just wanting to shake up your breakfast these quinoa pancakes are your best bet and will definitely become a new favorite! Let me know what you think!
